The young Grizzly Bear seen on the previous screen chasing spawning salmon near Hyder, Alaska captured his prey and is ripping off the skin. At the end of their spawning run, salmon flesh has little nutritional value and bears feed mostly on skin and brain tissue to help them build fat for the coming hibernation season.
